From Sonora, Mexico, the greens are a tasty treat in summer salad mixes. The plants get up to 7 feet tall with stunning red flowers and seed heads that contain an abundance of tiny shiny black seeds. This variety is from Southern Exposure Seed Exchange. I wanted to try to grow it because the contrast of leaf and flower color is stunning. I hope to learn more about how to cook and eat amaranth as a grain so if you know reach out! Direct seed in May or start this variety indoors in April, and plant these in full sun!
